Ingredients

1 cup whole wheat flour
1 tbsp. semolina
1/4 tsp. soda bicarb
2 tbsp. oil
1/2 cup coriander chopped
1 cup bottlegourd grated
1/2 tsp. red dhilli powder
1/2 tsp. cumin seeds
1/4 tsp. turmeric powder
1/2 tsp. ginger grated
1 tbsp. curds
salt to taste

Method

  1. Squeeze out the excess water from grated gourd.
  2. In a large plate, sieve the flour with the soda.
  3. Add semolina, make a well in the centre.
  4. Add all other ingredients in the well.
  5. Knead into a soft dough.
  6. Use greased palms and shape into 6" long, 1" wide rolls.
  7. Arrange in a colander to boil over steam.
  8. Or use a double walled steamer.
  9. Cover lid tightly and steam for 1/2 hour.
  10. Cut into 1" pieces.
  11. Serve piping hot with kadhi or fresh curds.
